Taste is the main aspect that you must consider in restaurant business. If you have average cooking skill or medium-rate chef to produce your product, do not even think to open a restaurant business. You would better hire a professional chef although it needs extra costs. You should consider that once the customers are disappointed about the taste, they will not ever come back to your restaurant.
